Step 1
Combine 1 chopped onion, carrots, celery, 1/2 stick butter, salt & pepper on med/low heat until soft. Then, add 1/2 cup diced ham and the quart or chicken stock. Bring to simmer. Once simmering, add in lentils and cover. Stir often. Once lentils dissolve (about 15-20 mins), add 1 can drained and rinsed chick peas, and seven grain rice blend. Simmer for 5 more minutes then serve.
