Radishes with Tonnato, Sunflower Seeds, and Lemon
This salad is like an inside-out tuna salad, with the radishes as the
centerpiece and tonnato, a smooth creamy tuna mayo, as the binder. It makes
a beautiful simple supper on a warm spring night or a great side dish to a
grilled veal chop. It’s best not to assemble this salad until close to serving
time, as the radishes are prone to weeping a bit.

Ingredients

Instructions
Step 1
Put the tonnato in a large bowl, squee?e in a cou?le o? tables?oons o? lemon ?uice, and stir to mix. Add the radishes and toss to coat them.

Add the mint and season well with salt and ?e??er. ?aste and ad?ust with more salt, ?e??er, or lemon ?uice.
Step 3
Add hal? the sun?lower seeds and s?routs (i? using). ?oss, then to? with the remaining seeds and s?routs. Serve soon.

?onnato sauce is truly Italian, but you’ll recogni?e the ?lavors ?rom the tuna sandwiches o? your youth. ?he sauce wor?s so well with so many vegetables, ?rom raw to grilled to ?ic?led.

Put the tuna and salt in a ?ood ?rocessor and ?ulse until it’s blended. Add ⅓ cu? mayonnaise and ?ulse until the ingredients are getting creamy. With the ?rocessor running, dri??le in the olive oil and lemon ?uice and ?rocess until the tonnato is very smooth and creamy.

?aste and add more mayonnaise, olive oil, lemon ?uice, or salt. Store in the ?ridge ?or u? to 1 wee?.
