Radicchio, Apple, and Celery Root Salad with Buttermilk–Poppy Seed Vinaigrette
Salad combinations with thinly sliced apple, celery root, and poppy seeds appear in many of my fall and winter meals, adding necessary crunch and sweetness to the often-bitter greens of the colder months. Celery root, the ugly and underrated bulb I have watched dull on many supermarket shelves, is indeed one of my favorite things to cook. Once you cut through the thick and fuzzy exterior, you will find its aromatic white flesh. It is delicious added to vegetable soups, mashed together with potatoes, or raw in salads.

¼ cupfull-fat buttermilk
2 tablespoonsextra-virgin olive oil
1 tablespoonpoppy seeds
1 teaspoonflaky sea salt
½ teaspoonfreshly ground black pepper
2 headsradicchio
core removed, quartered, and thinly sliced
1apple
medium, cored and thinly sliced
1 bulbcelery root
small, peeled, halved, and thinly sliced crosswise
4radishes
thinly sliced
Instructions
Step 1
1 In a large serving bowl, whisk together the buttermilk, olive oil, poppy seeds, salt, and pepper. Add the radicchio, apple, celery root, and radishes, then toss together with the vinaigrette to coat evenly. Serve immediately
