Step 1
Heat the oil in a large pan over a medium heat, add the onion, garlic & red & green peppers & fry for a minute.
Step 2
Add the beef to the pan & cook for a few minutes until nice & brown.
Step 3
Add the rice, chopped tomatoes & Mexican seasoning to the pan. Crumble the stock cube into a jug & add 500ml boiling water from the kettle. Stir until the cube is dissolved, then add the stock to the pan too. Lower the heat to low, cover the pan with a lid & simmer for 20 minutes or so, stirring frequently so it doesn’t catch on the bottom of the pan, until the rice is cooked & all the water is absorbed.
Step 4
Season with salt & pepper to taste. Top the rice with cheese & pop the lid back on for a minute or so for it to melt, then serve.
