Instructions

Step 1
Preheat the oven to 180°C. Grease a non-stick lamington tin and set aside
Step 2
Melt the butter in a medium fry pan over a medium heat. Once melted, add the onion and bacon, and cook for 4-5 minutes or until the onion softens and the bacon starts to turn golden. Transfer from the pan into a medium bowl to cool
Step 3
Place the zucchini, cheese, flour, and eggs in a large bowl. Add the cooled onion and bacon mixture, season well with salt and pepper, and stir to combine all ingredients
Step 4
Pour the mixture into the prepared tin, add cheery tomatoes on top, transfer into the oven, and cook for 30 minutes or until puffed and golden. Remove from the oven and allow to cool for 5 minutes
Step 5
Cut the slice into squares and serve warm or at room temperature
