Cut into 4 pieces
100gGreek Style Yoghurt
0.5Lime Juiced
0.5Cucumber
Peeled in ribbons
1red onion
sliced
1Carrot
Peeled in ribbons
1Spring Onions
Sliced, finely
5gCoriander
Extra For Garnish
4 Tbspsweet chilli sauce
4burger buns
200mlRice Wine Vinegar
100mlwater
1 tspnSoy Sauce
2 Tbspsugar
0.25 tspnSea Salt
0.25 tspnRed Chilli Flake
Thai Green Curry Seasoning
Instructions
Step 1
In a bowl or tray combine the chicken with the lime juice, yoghurt chopped coriander & Puréety Thai Green Curry Seasoning. Allow to marinade in the fridge for at least 30 minutes or overnight
Step 2
Mix together the ingredients for the pickle liquor, then pour over the carrot, cucumbers & onions. Cover and store in air tight container for at least 30 mins or they will keep for a couple of days in the fridge. You can drain and re-use the pickle liquor again
Step 3
When the chicken is marinated, cook on a medium heat for 6-10 minutes on the BBQ or grill, until cooked through turning halfway through. Ensuring the chicken is cooked thoroughly
Step 4
Serve the chicken burgers on top of toasted burger buns with the pickled vegetables & sweet chilli sauce
