Instructions
Step 1
Slice and chop scallion, dice sausage and mushroom.
Step 2
Crack eggs in a bowl and separate egg white from the egg yolk in a different bowl, beat eggs separately.
Step 3
Put cooking oil or lard in a heated skillet, cook egg white and egg yolk separately and remove them from the heat once the color starts to change.
Step 4
Put diced sausage in the skillet to cook for a minute until they turn crispy and golden. Add in diced mushroom to mix. Finally, add in pre cooked egg white and yolk, and one day- old rice to mix together. Simmer the rice on medium heat with the lid on (make sure to break rice during this cooking process).
Step 5
Season rice with salt, chicken powder and scallion to complete the final look. Serve warm.
