Roasted Veg Sandwich with Walnut Pesto and Goat Cheese

Ingredients

4 squaresfocaccia
4-inch, this page
butter
optional
½ cupWalnut Pesto
this page
4 handfulsRoasted Veg
this page, about 1/2 cup each
½ cupcrumbled goat cheese
Instructions
Step 1
Cut each piece of focaccia in half horizontally and lightly butter each piece. Buttering the bread is optional, but it does prevent your sandwich from getting soggy.
Step 2
Turn all the pieces over, butter side up, and generously spread half of them with walnut pesto. Top each pesto half with a handful of roasted vegetables. Crumble the goat cheese over the roasted vegetables and top with the remaining pieces of focaccia.
Step 3
Use a large serrated knife to cut each sandwich in half, and enjoy!
Step 4
PSSST…If you aren’t a fan of goat cheese, you could always substitute feta.
