Cold Buster Chicken Soup

This soup is perfect for this season of viruses going around. It's hearty and packed with herbs and cold busting ingredients and at the same time it's so delicious too! I like to add a pinch if cayenne to my individual bowl after serving as it helps with congestion clear up too 😉

Ingredients
8 servings
1 Tbspolive oil
2chicken breasts
diced small
1onion
diced small
2celery sticks
large, sliced small
2carrot sticks
large, diced small
1Roma tomato
diced small
1 tspitalian herbs
1 tsporegano
½ tspginger
½ tspturmeric
1 tspsalt
1 tsppepper
1 tspcayenne pepper
optional
1 tspcumin
8 cupschicken stock
0.5 lbpasta
lemon wedges
for garnish
fresh parsley
finely chopped
Fresh cilantro
finely chopped
Instructions
Step 1
Heat up oil in a large pot and add chicken, herbs and spices and all vegetables. Mix well and sautee.
Step 2
Once mixed add chicken stock to the pot and bring to a boil. Once boiling cover and lower the heat allowing it to simmer for 20 minutes.
Step 3
While it's simmering, an optional tip is to toast the pasta in olive oil before adding it to the pot, this prevents the pasta from becoming too soggy after a while, but if you don't mind the soggy pasta feel free to add it in as is directly from it's package.
Step 4
Uncover the pot and add in pasta and allow it to boil for an additional 10 minutes.
Step 5
Once all is cooked, add parsley and cilantro to the pot leaving some out to garnish individual bowls.
Step 6
Squeeze lemon juice into your bowl and enjoy!
