Peri Peri Chicken with Crispy Potatoes
This traditional fiery chicken recipe has had a low-cal and mild make-over. Great for all the family, you can remove the chilli if you’re cooking for kids.

Instructions
Step 1
Preheat the oven to 200°C/Fan 180°C.
Step 2
Make the marinade by combining 2 tablespoons of the vegetable oil with the smoked paprika, garlic, tomato purée, oregano, brown sugar, chilli and some black pepper in a small mixing bowl.
Step 3
Place the chicken thighs, drumsticks and red onions in a large dish. Pour the marinade over the top and mix well to make sure the chicken and onions are well coated. Leave to marinate for at least 1 hour, preferably longer (ideally overnight in the fridge).
Step 4
Place the chopped potatoes on a baking tray and drizzle with the remaining 1 tablespoon of vegetable oil. Season with black pepper and toss to ensure the potatoes are well coated in the oil. Place in the oven. After 5 minutes, remove the potatoes from the oven and add the chicken and onions to the tray. Return to the oven and cook for 30–35 minutes until the chicken is cooked through and the potatoes are golden and crispy.
Step 5
Serve with a crunchy green salad.
