Instructions

Step 1
In a large mixing bowl mix salt with flour and then stir in egg and water slowly. Keep stirring until all the liquid is almost absorbed.
Step 2
Grasp everything with hand and knead to smooth dough. Dry flour at the bottom is OK at the beginning. The moisture content needs to be controlled so the noodles are chewy enough.
Step 3
Use a rolling pin to pat, press, and flat the dough for several minutes (5-6) and then shape the dough into a ball, cover with plastic wrap and rest for 30 mins.
Step 4
Cut the dough in half; rolle one half into a larger and thin wrapper.
Step 5
Fold the wrapper up (three or four layers) and cut into thin and even strips with a sharp knife. When cutting the noodles, hold the knife vertically and ensure the strand is fully separated. Dust with flour and loosen the strips if necessary, Noodles can be stretched slightly. Shake off excess flour.
Step 6
Repeat to finish the other half. Cook immediately or cover with plastic wrapper and freeze for later.
