Instructions
Step 1
Cook two cups of jasmine rice in the instant pot. (Pressure cook for 3 minutes, vent after 7-10 minutes)
Step 2
Add oil on high heat, and add spinach. Stir until thawed and softened. Add 1 1/2 cups water, cover and let simmer for 5 mins
Step 3
Add jasmine rice and stir. Let simmer for about a minute before adding tomatoes and cilantro. Let simmer for additional 5 minutes
Step 4
Add garlic, onion, pepper, salt, dill, and red pepper powder. Stir and let cool slightly for 2-3 minutes
