Step 1
Remove any remaining skin from the fish fillet. Cut into small cubes and using a hand blender or mini blender pulse into a minced texture but if you go over and turn it more into a puree it makes no difference so don't panic.
Step 2
Put the fish into a mixing bowl with the raw egg, thinly sliced green bits of the spring onion and the finely chopped chilli pepper, garlic powder, salt and pepper and mix well. Leave in the fridge for 30 mins or so.
Step 3
Pre-heat the air fryer at 200C for 5 mins. Slice 2 lemons. When the fryer is ready, line the bottom of the pan with the sliced lemons. The lemons serve to prevent the gooey mixture falling through the holes as well as adding moisture and flavour to the bites as they cook. Place a tablespoon of the fish mixture on each lemon slice and return to the fryer. Cook on 200C for 6 mins. Check for firmness after then and if it needs to be firmer and more browned keep heating for a further minute at a time.
To serve
Step 4
Lift the bites off the lemons. discard the lemons or use as garnish. Serve hot with sweet chilli sauce (or any sauce of choice) in a dipping bowl and a side salad.
