Miso Soup with Ramen

Delicious Miso soup with ramen (optional) using very few ingredients. You can add as much of any vegetable as you want. Super simple and easy to do.

Ingredients

Noodles
For the broth
1.5Stock cube
vegetable or chicken, adjust to taste
1 dashSoy sauce
1 dashvinegar
1 dashsesame oil
2 tspGarlic and herb seasoning
1 tspgarlic powder
½ tspchilli flakes
1 cubeginger
Sesame seeds
1 tspsugar
Vegetables (near the end)
Right at the end (after heat off)
Instructions
For the noodles:
Step 1
Bring 2L water to the boil and add noodles. Cook for as long as the packet states. Keep the used noodle water! Use chopsticks or a slotted spoon to move the noodles to a separate bowl.
Preparing the vegetables:

Wash all vegetables and peel the carrots. Cut vegetables at an angle at a size that suits you (bite sized). Peel a cube of ginger and leave as a chunk. No need to chop it since we will be removing it later (unless you like biting into ginger). Transfer everything to a bowl or leave on cutting board.
Making the broth:
Step 3
Bring the used water we used to boil the noodles in up to a simmer. Add the stock cubes to the water and dissolve. Add the chunk of ginger as well as: a dash of soy sauce, a dash of vinegar (any vinegar will do), a dash of sesame oil, 2tsp of garlic and herb seasoning, 1tsp extra garlic powder, 1/2 tsp of chilli flakes, a handful of sesame seeds and about 1 tsp of sugar. Mix well and allow to stew together for 5-10 mins with the lid on. Note that you can also use fresh alternatives to the ingredients listed :)
Soup:
Step 4
Add vegetables straight to pot, stir well and cover with a lid until the vegetables have the texture you desire. (Personally I find that soft but still a small crunch is what I prefer).
Adding noodles:
Step 5
Add the noodles when everything seems done so they can come back to temperature and separate from each other.
Serving:
Step 6
Take the soup off the heat. Once off the heat, mix about 1 tbsp of miso paste into the broth until well dissolved. At this stage if you want, remove the chunk of ginger, it should be easy to find in the soup.
Step 7
Serve into bowls and enjoy warm!
