Instructions
Step 1
Rub the lamb neck fillets with olive oil, lemon, rosemary, mint, crushed chilli and garlic and marinade in fridge overnight
Step 2
Preheat oven to 130 degrees centigrade
Step 3
Chop up the carrots, onions, shallots and garlic
Step 4
Brown the lamb in a frying pan for 4-6mins then add to casserole dish
Step 5
Fry the onions, carrots, shallots, mushrooms and garlic for 4-5 mins, then add to casserole dish
Step 6
Add half a bottle of white wine, the lamb stock, a sprig of rosemary, a tablespoon of flour and simmer until reduced by a third
Step 7
Put the lid on the casserole dish and put in the oven for 3hours
