Instructions

Pickles

Step 1
1. In a heat proof medium bowl, combine the carrot, cucumbers, and onion. 2. In a small saucepan, bring the vinegar, granulated sugar, salt, peppercorns, and Chile to a boil. Reduce the heat and simmer for 3 minutes. 3. Remove from heat and allow to cool for 5 minutes 4. Pour over the vegetables and toss to coat. Cover and refrigerate, will keep up to 1 week

Pork

Step 2
1. Using a thin sharp knife, but the pork into 1/4 inch thick medallions 2. In a medium bowl or zip top bag, combine all ingredients. Add the pork and toss to coat. 3. Cover and refrigerate for at least 1 hour, up to 4 hours. 4. Heat a heavy skillet or grill pan over medium high heat until super hot. 5. Add the pork, spreading it out as best you can. Sear until dark and caramelized (2-3 minutes) DNFWI!!! (Do not F***with it) 6. Turn and cook another 2-3 minutes DNFWI!!!!

Sandwiches

Step 3
Spread a generous amount of mayo on both sides of the toasted baguette. Squiggle some sriracha. Pile on some pickles (shake em off first). Top with grilled pork and cilantro (optional). Close sandwich and cut in half. Enjoy
