Instructions
Step 1
Preheat the oven to 400 Fahrenheit. Toss the carrots with olive oil, salt, and pepper to taste. Roast until soft and starting to caramelize. Chop into bite sized pieces and set aside.
Step 2
While the carrots are roasting, cook the farro. Bring a large pot of salted water to a boil and add the farro once boiling. Cook, stirring occasionally, until desired tenderness is reached. Drain farro and rinse with cold water to cool.
Step 3
Toss the farro with the chopped roasted carrots, arugula, scallions, cherry tomatoes, pistachios, and crumbled goat cheese.
Step 4
Add in the lemon juice, olive oil, and salt and pepper to taste. Mix well. Adjust amounts of lemon juice, oil, salt, and pepper until desired amount of dressing is achieved.
