Mozzarella and Chorizo Stuffed Chicken

Instructions

Step 1
Preheat oven to 200C / Gas Mark 6.
Step 2
Make a cut with a sharp knife down the thicker side of the chicken breast and butterfly. Cover with clingfilm and beat with a meat tenderiser or a rolling pin to flatten out.
Step 3
Lay 3 slices of chorizo on the bottom half of the chicken breast, top with 2 slices of mozzarella and 2 basil leaves. Season with pepper and fold over to cover the filling. Secure with a small metal skewer or cocktail stick.
Step 4
Season the egg, and place the egg and breadcrumbs onto separate plates to create a breading station.
Step 5
Dip each chicken breast first in egg, and then in breadcrumbs to coat.
Step 6
Place the coated chicken breasts on a baking tray, sprinkle with olive oil and cook in the oven for 25 - 30 minutes until golden and cooked through. Turn once during cooking.
