G - 10-minute Creamy Pesto Salmon Fusilli

We've paired succulent pan-fried salmon with a quick, creamy pesto sauce that's filled with cherry tomatoes and fragrant basil. Set the table, because dinner will be ready in a flash!

Instructions

Step 1
Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a medium heat
Step 2
Boil a full kettle
Step 3
Once hot, add the salmon fillets with a pinch of salt and cook for 2 min on each side or until browned on both sides and almost cooked through
Step 4
Meanwhile, add the quick cook fusilli to a pot with plenty of boiled water with a large pinch of salt and bring to the boil over a high heat
Step 5
Cook the fusilli for just 2-3 min (it will keep cooking in the sauce later!)
Step 6
Once done, drain the fusilli, reserving a cup of the starchy pasta water
Step 7
While the pasta cooks, chop the baby plum tomatoes in half
Step 8
Once the salmon is almost cooked, add the chopped tomatoes and cook for 2-3 min further
Step 9
If the salmon still has its skin, carefully peel the skins off the salmon and discard it
Step 10
Break the cooked salmon into large, bite-sized pieces with a wooden spoon and add the pesto and soft cheese with approx. 75ml starchy pasta water and stir it all together
Step 11
Cook for 1 min further or until the sauce has thickened slightly
Step 12
Add the drained pasta and season with a generous pinch of salt and pepper and give everything a good mix up – this is your creamy pesto salmon fusilli
Step 13
Set the creamy pesto salmon fusilli in the centre of the table, ready to share
Step 14
Tear the basil leaves over, season with a grind of pepper and let everyone dig in
