Spicy Eggplant/Pork Stir-Fry

Ingredients
2 servings
2Asian eggplants
cut into 1/2 inch cubes
6 ozpork shoulder
sliced
2 Tbspoil
1 Tbspgarlic
1 tspsesame oil
sesame seed
for serving
1green onion
sliced, for serving
Sauce
Instructions
Step 1
Cut eggplants into cubes, soak them in the water for 10 minutes. Then drain water, set aside.
Step 2
In a small bowl, combine sauce ingredients, and set aside.
Step 3
Slice green onion, and set them aside.
Step 4
In a large pan over medium-high heat, add oil and garlic.
Step 5
Add eggplant, and cook for about 5 minutes.
Step 6
Add sliced pork, and cook the pork is no longer pink.
Step 7
Add sauce mixture, coat meat, and eggplants with the sauce. Pour sesame oil.
Step 8
Sprinkle sesame seeds, and add green onion for serving.
