Step 1
Preheat the oven at 200°C. Cut four vertical slits into the eggplant, about ½ inch deep. Insert the garlic cloves (peeled) as well as the green chilis in the slits. Oil the cut eggplant and the tomatoes and put them in an oven tray
Step 2
Roast in the oven for about 25-30 minutes, take out once the skin is starting to char and cover the oven dish (with another tray or alluminium foil. This step will help the peeling later)
Step 3
Chop your onion into small pieces. In a pan on medium heat, add the oil, garam masala, chili powder and follow with the onion. Cook for 5 minutes
Step 4
In those 5 minutes peel the eggplant and tomatoes. Chop everything (chilis and garlic included) roughly on a cutting board (or mash everything with a fork) and add it to the pan. Cook for another 5 minutes on medium-low
Step 5
Finally, add the cilantro chopped and mix well. Serve as a side dish with some naan or any other type of bread!
