Instructions
Step 1
Heat 1 tbsp olive oil in a large pot, add ginger & garlic, cook for 1 min.
Step 2
Add green beans & baby corn, season and cook for 3-4 mins.
Step 3
Pour in stock and bring to the boil.
Step 4
Mix in mushrooms & peas, season, reduce heat and simmer for 10mins.
Step 5
Cook noodles according to packet instructions, rince under cold water and set aside.
Step 6
Add bok choy & simmer for 10 mins.
Step 7
Mix through soy sauce and add chicken.
Step 8
Place noodles in a bowl & pour soup on top.
Step 9
Garnish with spring onions, coriander and a dash of soy sauce.
