Ingredients

2 cupsall purpose flour
2 teaspoonsbaking powder
¼ teaspoonkosher salt
½ cupbutter
unsalted at room temperature
1 cupsugar
1 tablespoonskey lime zest
1egg
room temperature
1 teaspoonvanilla
1 tablespoonkey lime juice
1 cuppowdered sugar
glaze
½ teaspoonvanilla
2 tablespoonskey lime juice
Lime zest
for garnish if desired, If garnishing with zest mix 2 tablespoons with 1/8 teaspoon citric acid and garnish with a pinch of zest
Instructions
Step 1
Preheat oven to 350
Step 2
Line baking sheets with parchment paper( I used four.)
Step 3
Make dough by creaming butter and sugar till creamy.
Step 4
Add egg, vanilla, lime juice, and zest, stir to combine.
Step 5
Add flour and baking powder, and mix to combine.
Step 6
Scoop out 24 small scoops and roll in balls. Place on parchment paper and bake for 10 minutes. They will not be browned or have color
Step 7
Cool 5 minutes and transfer to rack to finish cooling
Step 8
When cool, dip tops of each cookie in glaze
