Gramma Jones Steamed Pecan Cake
This is another of Katherine Dobson Jones apron recipes. These were made every Christmas and were an absolute favorite of my father and the rest of us. After Gramma could no longer cook, the lack was keenly felt until I was able to translate her recipe jargon into success. Lessons learned include that one must use cake flour and the meaning of such measures as a scosch.

Instructions
Step 1
Grease and flour tins. Traditionally made in re-perpused cans, I have also used German pudding tin well.
Step 2
Mix ingredients.
Step 3
Fill can or steamed pudding tin 2/3 full
Step 4
Cover tightly w/ foil or wax paper
Step 5
Place in steamer w/ 2 inches water
Step 6
Cook slow for 3 hours.
Step 7
If using cans, open bottom of can and and push out from bottom. Wrap in waxed paper and cool. This ships well and actually improves with time.
