Instructions

GET AHEAD Pile the flour into a large bowl with a good pinch of sea salt. Gradually

pour in 12/3; cups of warm water, mixing it into the flour with a fork. Knead the

dough on a flour-dusted surface for 5 minutes, or until smooth and elastic, then

wrap and rest in the fridge overnight (at least 12 hours).

ON THE DAY Spoon the cottage cheese into a serving dish. Finely grate over the

lemon zest, squeeze in half the juice and drizzle with 1 tablespoon of extra virgin

olive oil. Ripple together and season to perfection, tasting and tweaking. Prep your

chosen crunchy veg, trimming and halving or slicing, ready to dunk. Finely grate

the walnuts into a small bowl. Pick the herbs into another.

TO SERVE Toast the nigella seeds in a large dry non-stick frying pan on a high heat

for 2 minutes, then turn the heat off. Rub a large clean work surface with olive oil,

then gently stretch out the dough to the size of a pizza. It should be nice and

elastic, so keep picking it up at the edges and stretching and pulling it out, then

placing the dough back down, where it should stay in place. You want to create a

large thin layer about 39 × 16 inches – it doesn’t have to be perfect. Drizzle the

surface with oil, then sprinkle with sea salt, black pepper and the toasted nigella

seeds. Pat all over, then, working across from one end to the other, roll the whole

thing up into a giant sausage, and twist into a snail shape. Let it relax for 10 minutes, then roll or pat out to ¾ inch thick. Cook in the frying pan on a medium-

low heat for 15 minutes on each side, or until golden and cooked through.

Remove to a board, let it cool a little, then use your hands to forcefully smash it in

from the sides, meaning you can easily tear it apart. Serve everything at the table
