My mom made shake & bake chicken a lot when I was a kid. I’ve been craving it here lately but wanted a healthier version that was not processed. Here it is! I used crushed croutons and gluten free flour for mine and it came out great. Great paired with artichokes and baked sweet potato fries.

Step 1
Preheat your oven to 400°. Mix all ingredients other than chicken in a gallon ziplock bag and shake until fully combined and the oil is absorbed.

Add the chicken one piece at a time and shake until coated. I sprayed my chicken with oil first because I had dried it off but this isn’t necessary.
Step 3
Place the chicken on a lined baking sheet and bake for about 20 minutes or until the chicken reaches 165°.
