Step 1
Boil some water in a pan/kettle, add a pinch of salt. Add the eggs gently in the boiling hot water and set a timer. 6 mins for gooey soft boiled eggs and 10mins for hard boiled eggs. (For this mix, you need hard boiled eggs. Since i have started doing this, the eggs are perfect every time and peel easily)
Step 2
Drain, peel and mash the boiled eggs coarsely
Step 3
Add salt, pepper, dried herbs, mayo and chopped cucumber and mix it
Step 4
Crush some crisps. I really like Sensations Thai Sweet chilli crisps with this mix but you can use any you like.
Step 5
Add the egg mix to your toast/bagel and top with crushed crisps. So nice!!
