Instructions

Step 1
dice watermelon and place into a bowl
Step 2
thinly slice red onions. if you are pickling yourself: take 1 cup water, 1 cup white vinegar, salt, sugar and place into small sauce pot. bring to a slight boil then turn off heat. let cook for 3 minutes then submerge onions in pickling liquid.
Step 3
dice cucumbers, jalapeños, and avocado.
Step 4
place watermelon and add cucumbers, jalapeños, avocado, and feta.
Step 5
in a separate bowl, squeeze out juice of limes and lemon. add dijon mustard + honey. add in olive oil and whisk in until vinaigrette is mixed well.
Step 6
pour vinaigrette over watermelon salad and enjoy!
