Preheat oven to 400F (200C)

In a large bowl mash 3 peeled large black bananas with a fork.

Now add the vegetable oil/vegan butter/coconut oil and the brown sugar. Whisk until smooth.

Next add the AP flour, baking powder, and cinnamon/mixed spice, and combine well with a spatula.

If you’d like to add in 50g of any of the three add-ins (vegan chocolate chips/raisins/walnuts) you can fold them in now.

Now pour your batter into a greased 2Ib loaf tin, and bake for 20 minutes, uncovered. After 20 minutes, check and cover with foil if the cake is browning.

Keep on checking on the loaf. It’s ready when a toothpick inserted in the middle comes out clean.

Allow the loaf to cool for 30 minutes before you cut into it.
