Instructions
Step 1
Preheat oven to 200C.
Step 2
In a large bowl combine warm water, yeast, sugar, salt, 1 tbsp olive oil and flour. Mix well and add 1 tbsp olive oil on top. Cover and keep in the fridge overnight or a minimum of 8 hours.
Step 3
Add 2 tbsp olive oil to the baking dish, then place the dough. Cover and keep in a warm place for 3-4 hours.
Step 4
Grease your hands with olive oil and dimple the dough, add halved cherry tomatoes and thyme leaves on top(or anything you like your focaccia with) and bake for 35-40 minutes or until golden.
