Instructions
Step 1
Cook rice according to directions and add corn and tomatoes

Put rice mixture and healthy dollop of beans in a tortilla and roll
Step 3
Line baking dish with thin layer of enchilada sauce then add the rolled and stuffed tortillas

Top with remaining enchilada sauce and the shredded pepper jack
Step 5
Bake at 400 for 20 minutes
