Rich butterbean and tomato traybake

A flavoursome easy one tray dish for all the family to enjoy. Serve with or without chilli and a rocket salad. Any other vegetables can be added to use up leftovers too.

Ingredients
6 servings
2onions
peeled and chopped
50gsun dried tomatoes
50ggreen olives
canned, drained
2cloves garlic
crushed
1 tablespoontomato puree
2 x 400gcan butterbeans
drained
1 tablespoonolive oil
50mlred wine
80grocket
optional, to serve
½ teaspoondried chilli flakes
optional
400gcan chopped tomatoes
1stick celery
diced
2carrots
peeled and diced
Instructions
Step 1
Heat the oven to around Gas 5 or 180C.
Step 2
Heat the oil in a large pan and add the onion and garlic. Fry for 4-5 minutes until soft, then transfer into an ovenproof dish or roasting tray.
Step 3
Add all of the other ingredients to the cooking dish and stir together until well mixed.
Step 4
Cover with foil and bake in the oven for 40 minutes, then take the foil off and bake for a further 5 minutes.
Step 5
Serve the traybake with rocket salad.
