Not only are puy lentils delicious, but they are rich in fibre and are a great source of iron. This dish is simple to make and it’s packed full of flavour and richness.

Instructions
Step 1
Rinse your lentils and then cook as per instructions with a vegetable stock sachet
Step 2
Set your oven to 180c fan
Step 3
Cut your aubergine in half, then score with a knife, careful not to cut the skin
Step 4
Drizzle over olive oil and some water
Step 5
Cook for 25 minutes. In the meantime, thinly slice your onion, garlic and peppers
Step 6
Once the lentils are cooked, drain and leave to the side
Step 7
Once the aubergine is cooked, leave to the side to cool
Step 8
Add your onion to a pan with oil and allow to soften
Step 9
Add your garlic and grilled peppers
Step 10
Once the aubergine is cool, use a spoon to remove the aubergine from the skin, careful not to cut it. Roughly chop the aubergine and add it to your pan

Add parsley, smoked paprika, cinnamon and bay leaf. Cook for 5-10 minutes
Step 12
Take off the heat, pour in your lentils and remove your bay leaf. Mix together
Step 13
Spoon the lentil mix into your aubergine skin and enjoy
