Sausage & Rice Casserole - Instant Pot
We like to serve with biscuits and either corn or green beans on the side.

2 lbsground pork sausage
2 cupslong grain white rice
or long grain brown, rinsed & drained, Either is fine but the brown rice takes much longer to cook so take that into consideration when choosing
1 pktdry onion soup mix
I have always used the mushroom & onion but choose whatever suits you
2 cupschicken broth
1 ½ TbspBeef
or 1 bullion cube diluted in water
1can cream of chicken soup
1can cream of celery soup
1can sliced black olives

Instructions
Step 1
Prepare the GROUND PORK :
Step 2
1. Set to Sauté: Set the Instant Pot to 'Sauté', use the 'Adjust' button to set the heat level to 'More', and allow the pot to heat up.
Step 3
2. Cook the Ground Pork : As soon as the digital display reads 'Hot', add the ground pork to the pot and separate it into small pieces using a large spatula or spoon. Continue until are cooked through, about 8 to 10 minutes.

3. Add the onion, celery, Better than Bouillon, and black pepper. Cook until the onions and celery are soft. About 2 to 3 minutes.

4. Cancel Sauté: Cancel out of the Sauté function.

Add the CHICKEN STOCK & RICE:

Add the chicken broth to the pot while fully deglazing the bottom of the pot. Add rice, gently pressing the rice into the liquid but do not stir.
Step 8
Add the olives & mushrooms, dry onion soup and each of the cans of soup but do not stir.

Set the COOK TIME:

Minute Cook Time (White Rice): Close the Instant Pot and set the pressure release valve to 'Sealing' and then set the pot to cook on 'Manual' / 'Pressure Cook', 'High Pressure' for 3 minutes. * For Brown Rice cook time is 22 minutes.
Step 11
10-Minute NPR: Once the cook time has completed, allow for a 10 minute NPR (natural pressure release). Release any remaining pressure after the ten minute NPR has completed.

MIX & SERVE:

Open the pot, thoroughly mix with a large spoon.

Put on Air Fryer Lid and set pot to Air Fry or Bake for about 5 minutes.
