Homemade breakfast burrito 🌯
First homemade breakfast burrito... 🌯 Woke up on the wrong side of the bed, but this helped. Homemade refried beans, scrambled eggs, tater tots, vegetarian breakfast sausage, avocado, green salsa, red onion, habanero hot sauce.

Instructions
Step 1
Preheat oven to 400 degrees. Heat frozen tots according to package. Prepare sausage as well (I used @beyondmeat vegan breakfast sausage). For 4 medium sized burritos I used about 20 tots and it was more than enough. Also used 3 of the sausage patties and crumbled with my hands.
Step 2
To make the refried beans, I used my leftover @rancho_gordo mayocoba beans (probably about 1 cup) and heated them up over coconut oil with some garlic powder, cumin, and lime. Mash with a wooden spoon when frying to get that refried bean texture.
Step 3
Scramble the eggs (4-5) then take a tortilla (I used @thebesttortilla so they came out as mini burritos), lay it flat on a cutting board, spread the beans in the middle and top with egg, tots, sausage, avocado,
