Cake
1 ½ cupvegetable oil
3eggs
2 tspcinnamon
1 tspsalt
2 cupssugar
2 ½ cupsflour
3carrots
large, grated
1 cupcoconut
2 tspbaking soda
2 tspvanilla
1can crushed pineapple
1 cupchopped nuts
Frosting
Instructions
Step 1
Grate carrots.
Step 2
Beat oil, eggs, cinnamon and salt together.
Step 3
Add remaining ingredients one at a time. Beat by hand.
Step 4
Bake for 38 minutes at 350 degrees.
Step 5
Make the frosting. Beat the cream cheese until smooth. Add the butter and mix until well combined and smooth. Add in the powdered sugar and vanilla extract and continue mixing until fully combined.
Step 6
Frost the cake.
