Step 1
Mix all bread ingredients excluding butter in a stand mixer.
Step 2
Once dough has formed, toss in softened butter and continue to mix until dough is smooth and let it proof in a lightly oiled bowl for 1.5 hours.

Cut dough into 90g portions and let it proof on a baking sheet for another 1.5 hours

Place flattened topping on top of bread then brush with egg wash (1 egg) and bake at 375F for 15 minutes.

Mix all ingredients into bowl until a soft dough forms.

Divide into 13 equal portions and flatten over plastic wrap
