A simple Japanese classic, known as tamago gohan, literally meaning ‘rice egg’, embodies Japanese simplicity in one dish. The hot rice will cook the yolk slightly, turning it pale and thick.

Instructions
Step 1
Put the crispy fried shallots, furikake, nori and sesame seeds into a mini blender or spice grinder, or use a pestle and mortar, and grind to a rough powder.
Step 2
Combine the light soy sauce, sesame oil and mirin. Set aside.
Step 3
Divide the steamed rice between two serving bowls, making a shallow dip in the centre of each. Place an egg yolk into each dip. Spoon over the dressing and sprinkle with the blended nori and furikake powder.
Step 4
Mix everything together with chopsticks and enjoy.
