Salmon & Avocado on an English Muffin (with special diet modifications)

See steps 7-10 for special diet modifications. I get tired repeating my breakfasts. I got a new air fryer, so I thought, "Why not make a twist on a favorite of mine?" Normally, I do this with toasted muffins, but everything else is cold (and you certainly can, too!). The air fryer keeps it quick, but the flavors are so much more intense! This would be a great option for a brunch or even an after school snack. You can dress it up, or make it simpler with just cheese and salmon. Or substitute tuna if you prefer.

Instructions

Step 1
Separate the muffin halves and Sierras half of the cream cheese on each half.

Lay the rings of onions across the cream cheese. Then lay the avocado across that. Optionally, sprinkle with a bit of finishing salt for a pop of added flavor.

Preheat your air fryer to 375Β°.
Step 4
Lay a slice of salmon gently atop each pile.
Step 5
When the air fryer is ready, place both sandwiches in the basket and cook for 8 minutes. Do not turn out shake the food during cooking.

SERVING NOTES: This is a very versatile dish. As an entree you will want to serve both halves of the muffin. But a single half is perfect as a side for a buffet. For an appetizer, you can cut a single half in half or quarters; or use a smaller bread to start with and smaller pieces of fish. If you want to go really decadent, drizzle a hollandaise sauce over the top with a few capers or some paprika for a garnish.

SUBSTITUTIONS: Gluten: Use a gluten-free muffin or other bread.

Lactose: If you can't find a lactose-free cream cheese, substitute any other LF cheese; you may need to use a LF buttery spread as a base layer if the cheese isn't as creamy as cream cheese or else the bread will be very dry. Also be aware that Bay Sourdough English muffins do contain a small amount of milk, so you may need to swap bread, too.

Dairy/Egg/Pescatarian: Bays muffins contain butter in addition to milk (see Lactose above), but NO eggs.

Vegan: Why are you looking at a recipe containing salmon? πŸ˜‰ My suggestion would be to build this on top of a large portobello. Instead of salmon, sprinkle with some vegan "bacon" crumbles.
