Instructions

Step 1
Place a small frying pan over a low heat and toast the white sesame seeds until golden and aromatic, then leave to cool. (There is no need to toast black sesame seeds.)
Step 2
Put the chives, soy sauce, half the lime juice and the sesame oil into a mixing bowl. Add the tuna, season with a little salt and pepper and toss to coat.
Step 3
Put the avocado into another mixing bowl and gently fold in the remaining lime juice.
Step 4
Divide the tuna between four plates, making a small mound of it in the centre. Spoon the avocado on top, then sprinkle with sesame seeds and serve immediately
Step 5
To plate this as we do in the restaurant, rub the inside of a 6–8cm round pastry ring with a little extra sesame oil and place it in the centre of a serving plate. Spoon in a quarter of the tuna tartare, add a quarter of the diced avocado on top and sprinkle with sesame seeds, then gently and slowly remove the ring.
