Step 1
Trim off any excess skin from the thighs and place in a bowl

Pour over the soy sauce, honey and pepper. Mix so all is coated. Cover and put aside for thirty mins

Preheat oven to 180 degrees
Step 4
Place chicken skin side up on a rack over and oven tray.

Cook for 25-30 mins until skin is caramelised and crisp.
Step 6
Slice up and serve with rice and steamed tender stem broccoli.
