Athenian Green Beans

This is an easy, healthy, and very forgiving recipe. Pre-cooking the beans in the instant pot is skippable if you prefer your beans a little firmer. Feta is optional but tasty. Great served with roasted potatoes and chicken.

Instructions

Step 1
Put green beans into an instant pot on a rack or steamer with 1 cup of water, high pressure for 1 minute, quick release.
Step 2
Meanwhile, put oil, sliced onions, and minced garlic into a slow cooker and mix in all tomatoes.
Step 3
Remove beans from instant pot and stir into tomato mixture in slow cooker.
Step 4
Add dill, salt, and pepper.
Step 5
Cook on low for 5 hours or high for 2 1/2 hours, or until desired doneness is reached. 6. Serve sprinkled with feta.
