For Chicken Thighs:

1. Pat Chicken thighs dry with paper towels

2. Season your chicken thighs with:
• 1 TBS Extra Virgin Olive Oil
• 1 TSP Salt
• 1 TSP Black Pepper
• 2 TSP Cajun Seasoning
• 2 TSP Italian Seasoning

3. Slice the whole lemon in half and squeeze 1 half of the lemon on the chicken thighs

4. Rub spices into your chicken thighs and ensure the chicken is evenly coated

5. On an oven-safe tray, spray non-stick cooking spray and place your chicken thighs! Preheat your oven to 350F
For The Veggies:

1. Wash & Dry veggies

2. Slice your baby Yukon potatoes in half

3. In a large mixing bowl, add your sliced baby potatoes and baby carrots

4. Season the Potatoes and Carrots with:
• 1 TBS Extra Virgin Olive Oil
• 1 TSP Salt
• 1 TSP Black Pepper
• 1 TBS Cajun Seasoning
• 1 TBS Italian Seasoning
• Lemon half

10. Ensure veggies are evenly coated with spices by mixing together!

11. Place your veggies alongside your chicken thighs and bake for 35 minutes
