Ingredients
6 servings
30 ounceschicken meat
pulled, boneless, roasted
6 ouncesBBQ sauce
good
6 ouncesRomaine lettuce
freshly washed
6 ouncesRanch dressing
or substitute ranch
6 tablespoonscorn
6 tablespoonsfresh tomatoes
diced
6 tablespoonsblack beans
6 tablespoonsJicama
cut into strip, optional
3 oztortilla chips
baked or fried, or strips
Instructions
Step 1
Toss the salad with the corn, tomatoes and black beans.
Step 2
At the Firehouse we also use Jichama strips for the crunch and the sweetness.
Step 3
Toss in the tortilla strips and the Ranch dressing.
Step 4
Toss the salad in the dressing, place in bowls.
Step 5
Reheat the chicken meat in the sauce.
Step 6
Simmer and stir for just a few minutes until hot through.
Step 7
Place the hot meat over the top of the salads and serve immediately.
