Step 1
Dice onion and finely chop Thai chili

Slice scallions into thin rounds

Cut bacon, sausage, and pork roll into bite size pieces

In a bowl combine mayo, calamansi juice, black pepper, and garlic powder. Mix until well combined.
Step 5
In a pan, render the bacon. Once almost crispy, add sausage and pork roll. Cook for 1 minute then add Thai chili and half the red onion. Cook until onion is slightly translucent.

Cook tater tots in fryer or air fryer until crispy and lightly salt.
Step 7
In a bowl add tater tots, breakfast meat mixture, the other half of the red onion, and 2 tablespoons of the calamansi aioli. Mix until well combined.
Step 8
Heat sizzle plate until it is smoking. Once it reaches the desired temperature and place on top of wooden charger.
Step 9
Working quickly, add butter to the plate and spread around. Next add the sisig. Using a spoon, create a hole in the middle and crack the egg into it. Drizzle more aioli on top, and garnish with scallions. Serve and enjoy
