use the simple brown rice tortilla recipe as the wrap or a large collard green, kale or cabbage leaf. add chicken if you would like additional protein.

Instructions
Step 1
Place the cooked black beans in a serving bowl and sprinkle with salt, if desired.
Step 2
Peel the cooked yam, place the flesh in a separate serving bowl, and mash it with a fork.
Step 3
Place the mashed avocado in a separate serving bowl.
Step 4
Set the lettuce leaves and tortillas on a platter.
Step 5
Let each person assemble his or her own taco.
Step 6
Garnish with chopped cilantro.
