Step 1
Preheat your broiler
Step 2
cook the onions in a small frying pan with butter over medium-high heat until translucent
Step 3
put the poblano and tomatillos in a small casserole dish and place 6 inches under the broiler for 5 to 10 minutes, until the skins start to brown
Step 4
add the cooked onions, broiled poblano and tomatillos, and the jalapeño to a food processor or blender, and puree; set aside
Step 5
form 4 patties, season both sides with salt and pepper, and cook the burgers as you normally would, making sure to melt a heavy helping of Monterey Jack on top
Step 6
Build your burger: Bottom bun, cheeseburger, a generous helping of salsa verde, tomato, and the top bun.
