Instructions

Cheese Sauce

Step 1
Make homemade pasta
Step 2
Combine all ingredients in a mixing bowl and mix into a paste
Step 3
Cover the bowl with plastic wrap and place in the refrigerator

Assemble and Cook

Cut the pasta into squares about 4 inches on each side
Step 5
Place the cheese filling into a zip lock bag, close it, and cut one end to create a piping bag

Gently pipe the cheese onto the center of each square
Step 7
Wet two adjacent side of each square with water using a finger
Step 8
Fold each square over diagonally, pinch tightly to close, wet one edge of the dough and wrap it around a finger and pinch tightly to close

Bring a pot of water to boil and while that heats up, make the vodka sauce
Step 10
In a separate frying pan, place a thin layer of olive oil and 1/2 lb of pancetta cut into bite-sized pieces and fry until crispy golden brown
Step 11
Cook the pasta until slightly underdone, spoon out with a wire basket and place directly into the frying pan with the vodka sauce. Alternatively, drain all of the pasta, transfer it back into the pot and poor the vodka sauce over to combine
