For the rub
3 Tbsponion powder
3 Tbspdried thyme
3 Tbspground allspice
3 Tbspblack pepper
2 Tbspbrown sugar
2 Tbspgarlic granules
1 Tbspsalt
1 Tbspground ginger
1 Tbspground cinnamon
1 Tbspnutmeg
grated
1 ½ Tbspcayenne pepper
1 Tbspdried marjoram
1 Tbspdried sage
1 Tbspdried rosemary

Instructions
Step 1
Mix together all rub ingredients and mix into chicken thighs
Step 2
Heat a large ovenproof pan over a high heat and spray it with a little oil. Add the thighs to the pan and cook for 4-5 minutes, then turn them over and cook for another 5 minutes.
Step 3
Remove the pan from the heat, then pop it into the oven and cook for 15 minutes.
Step 4
Stir the rum into the stock, pour into the pan and put back into the oven for another 10 minutes.
Step 5
Remove and allow to rest for 5 minutes. Divide between four plates and squeeze over the wedge of lime.
Step 6
Serve with rice
