When sick, we try to eat a low protein diet, a homeopathic remedy to move toxins through the body more quickly. This is easier if rice is already cooked. I always have fresh vegetables available. You can change out veges, add more, get creative. This is also delicious over cooked quinoa instead of rice.

Step 1
In a 12" non-stick pan, saute onion in 1 tbsp olive oil for 3 -5 mins at medium heat
Step 2
Add garlic to onion, stir, cook 2 minutes longer
Step 3
Add squashes and cook several minutes until they start to brown, stir & flip to cook on other side (don't spend too much time trying to flip them all.)
Step 4
Add kale to the top layer, cover pan, let cook until kale wilts, 4 - 5 minutes
Step 5
Heat rice in microwave until hot, about 2 or 3 minutes
Step 6
Serve pan mixture over hot rice, sprinkle with soy sauce
